Strawberry Lemonade Smoothie

Nothing screams summer more than I cold glass of lemonade, strawberry lemonade if you’re fancy. Strawberry season for us (here in Israel) actually starts around November, so these delicious, red diamonds are, sadly, on their way out.

In honor of summer approaching, and to bid the Israeli strawberry farewell, I created this strawberry lemonade smoothie. Mmm… and it’s so tasty!

This smoothie is the healthiest version of strawberry lemonade that I’ve ever had, and it still tastes just like the classic. What makes this smoothie great is that it has greens and beets! Yes, it’s doubly good for you.

Also, the strawberries and lemons have loads of vitamin c, which we actually need in order to absorb the iron from the greens. To make this even more powerful, I added some liquid vitamin c. Let’s not let those nutrients go to waste, right?

Notes on this recipe:

Lemon zest adds a wonderful lemon flavor without being too sour. Remember to grate just the surface layer of the lemon, and try not to get too much of the white pith. I love to use my microplane, it is seriously one of the best kitchen gadgets I’ve purchased.

If you want this smoothie to be cold, either use part ice/part water instead of the full amount of water or use frozen berries or spinach. When I made this smoothie, I froze the strawberries the night before and used them as “ice cubes.”

Lastly, peel and chop a beet before measuring out the pieces. You probably won’t use a whole beet, so toss the extra in the freezer to use in your next smoothie!

Strawberry Lemonade Smoothie
Ingredients

1 full lemon – squeezed for juice

(I used about 3 tablespoons of fresh lemon juice – if your lemon isn’t that juicy you may need to juice another half of a lemon)

Zest from one lemon

1 ½ cups of chopped strawberries

1 cup spinach

½ cup chopped beet pieces

1 cup water or coconut water

1 dose of liquid vitamin c

Honey to taste (optional)

Method

Squeeze the lemons and discard any seeds. Peel and chop the beet. Add the lemon juice & zest, beets, spinach, and the liquids to the blender and blend until smooth. Wash the strawberries, cut off the green tops and slice them in half. Add all of the remaining ingredients to the blender and blend until smooth. Serve and enjoy!
