Dragon Fruit and Beet Smoothie

Here in Israel, the produce sections of supermarkets are extremely seasonal. I always know what’s ripe in the fields because they’ll be stacked high at my local market.

Right now, it’s dragon fruit, rich, magenta dragon fruit. At the cheap price of $1 USD a fruit, I’ve definitely been buying these babies by the armful.

How could I resist?

Fruit grown in Israel is also picked at its peak ripeness. The country is so small, so it’s quick to distribute fresh-picked produce. That’s great for taste (and nutritional value), but unfortunately, it only takes a day or two before the fruit begins to spoil.

I’ve mentioned many times before that the easiest ways to save spoiling fruit are to 1. make a smoothie (the soft, mushy fruit doesn’t seem so unappetizing in a smoothie) and 2. Freeze it for smoothies in the future.

I’ve done both with my dragon fruit.

The smoothie I’m currently loving is made with beets (I love a good beet smoothie in the morning). The color is to die for and, of course, I’m sippin’ and smilin’ while thinking of all those good-for-me nutrients!

If you can’t find the purple dragon fruit, the white version will work as well.

Here is how I made my dragon fruit & beet smoothie:

Dragon Fruit & Beet Smoothie
Ingredients

1 cup cubed dragon fruit

½ cup beet – peeled and chopped into bite-size pieces

1 large frozen banana (or two small frozen bananas)

1 tablespoon of silan (or 1 large date)

1 teaspoon maca powder

1 cup of water

Method

Blend all of the ingredients in a blender until smooth.
