Beet Berry Smoothie

I recently read that beets are fantastic to have in the morning because they provide you with energy. Beets have naturally occurring nitrates that actually help oxygen to better travel through our bodies. They wake up our sleepy organs and muscles. So this beet berry smoothie is perfect for mornings!

In addition to being little energizers, beets are also high in antioxidants, and they are anti-inflammatory and detoxifying (so are the berries, so its just all around goodness here).

Frozen Berries

I wanted to put some beets to the test by incorporating them into my morning smoothie.

Now, not everyone wants to have beets first thing in the morning, so this is a little beet, a little berry. Plus, with the vanilla and creamy cashews, it was like a fruity milkshake.

Beet Berry Smoothie
Ingredients

1 cup of raw beets chopped into small pieces

2 cups of any frozen berry mixture (raspberries, strawberries, blueberries, blackberries)

1/2 of a vanilla bean (or ½ tsp of vanilla extract)

1 tablespoon of honey (optional)

1/4 cup raw cashews

1 1/2 cup water or your favorite milk

 

The Night Before

Soak the cashews in a bowl of water overnight. If you want to make it really easy, combine the beets, vanilla, cashews and water in a container (or the blender), and let the mixture sit overnight. If using the vanilla bean, slice in half the long way, and scrape out the seeds using the back of your knife.

In the Morning

Combine all of the ingredients in the blender and blend until smooth. You may need to mix occasionally, as the mixture will be thick. That’s it! Don’t you just love smoothie recipes?
