Each New Year, loads of people vow to eat healthier. It is the idea of a fresh start that motivates us all to do better. I’ve always had a slightly different philosophy on “healthy” eating. It isn’t all about eating steamed vegetables and brown rice. I believe that if we make sure we eat a high percentage of fruits and vegetables, we will get the valuable nutrients that we need. So why not add a bit of flavor and fat on top – it’s still healthy right? Israeli cuisine, the aspects that originate from the Mediterranean and Middle Eastern regions, does just that. It is full of delicious vegetable dishes, which are served abundantly at the dinner table. Rarely is just one salad served, there has to be more than that! In honor of fresh starts, I am sharing a few of my favorite salad ideas that I’ve acquired over the last few months of living in Israel.
